A gastronomic week

by Library of the Institute for Zamora

occasion of the festivities ahead of us, today I speak of a kind of Easter guide but, yes, from a gastronomic point of view.
I speak book "A week gastronomic" of Francisco Javier Cuadrado Alonso, published by the IEZ.
Dining and Holy Week van closely linked, as in any festival, and Santa Week is the most popular holiday of Zamora by far.
Week Santa in Zamora is a parade of dishes, each more exquisite, without need of a long and complicated processing. It's time course of a lifetime, made the traditional way.

I leave here a recipe typical of this time as a sample of what you can find in the book.

Oiled

Ingredients:

1 l . Maimona oil
2.5 Kg traditional flour mixture
Zamora Farias
white (slightly more than half a glass of water)
Brandy (just under half a glass of water)
4 egg yolks
Canela 750 gr. sugar

Prepared

In a bathroom, put the oil, sugar, wine and liquor. Mix well and little by little, we are adding flour until you complete the whole of it, obtaining a good mixing of the whole. We make balls that flatten a bit and we made a top cross-shaped incisions. The brush with egg and sprinkle sugar on top and we put the hrno about 200 º for ten to fifteen minutes.
